What to make...create?
Creativity has been running through my mind over and over today!
Got up and made breakfast like normal.
Then made a quick chocolate cake that will be topped with strawberries soaked in cointreau, homemade energy bites, roasted cauliflower, scallops and shrimp with quinoa and a fresh veggie salad.
Being home makes me want to create. EVERYTHING.
Energy Bites Recipe:
1 cup tolled oats
1/2 cup toasted slivered almonds
1/2 Peanut butter
1/4 cup dried cranberries
1 tsp vanilla
4 tablespoon agave syrup
Mix all together and let sit in the fridge for 1 hour before forming into balls. Place balls in a container and keep in fridge up to one week.
