You know, the life
Being a couple that travels to and from multiple places we tend to get lost in our own schedules. Admittly we do make time to do something special with each other every day....even if it is as simple as sitting down and having a cup of coffee or tea together.
The past week we have been in STL and working a TON. Between our normal jobs, I had the wonderful idea to volunteer at a vaccine clinic! WHOA! Super busy and I must say, I am a pro at giving shots...(is that something I should be proud of?) Anyway, this week I broke out my crock pot to ensure that we could have tasty, hearty and healthy meals each and every day.
A bummer of sorts but also a blessing. my computer for some reason decided to stop working the other day. Sad I know, but it has forced me to occupy myself with other things. Getting little things done around the houses. Most importantly we have been really getting things organized for Baby Dubs. I have started to crochet little baby things and I think we have a better idea of certain things...So, I miss my computer and want it to be fixed, but I am enjoying getting other things done as well.
Here is a run-down of some Crock Pot Cooking:
Day One: we had a lovely afternoon date with our great friends and their daughter. Thanks B &T for the company and the cookies. I make crock pot chicken tacos. It ended up being a little Mexican fiesta. It was an afternoon of laughs and catching up with some tasty food. Menu to follow.

Day Two: Andy had meetings all day and I had to work an odd shift so I tried something I have NEVER done before. I roasted a whole chicken in the crockpot while we were gone. The house smelled so good when we got home. It was really tasty! I then used the carcass and made homemade chicken stock for future use and the leftovers I made into a baked couscous casserole for another meal!

Day Three: Working 10-5 and then doing a 7pm engagement put a damper on our normal routine. But hey, we roll with the punches. Before we left in the morning I made a crock pot veggie chilli. A good meal to relax with after a long day.

Day Four:We have plans tonight that I am not aware of 100%, but that isn't stopping me from making sure we have a tasty meal ready for before or after.
