So it is another beautiful day in Ethel! We woke up after sleeping in early and took the pups for a brisk morning walk. It was fun to stop by Gwen, our little old lady neighbor, and catch up a bit on the comings and goings of each others lives.
Really the most enjoyable thing has been to be home and just to "be." Having a little break from work has been amazing and something that I needed more than I have needed before. Like most people, I take for granted all the little moments that seem so un-important when in the rush of a normal day. When given the chance to have some down time it puts things back into perspective. The "ah-hah" moments that I need.
Eating:
I am enjoying some fresh berries on top of greek yogurt as well as a half of an english muffin with PB&J on it. Super tasty I must say. A good fresh morning meal to go with my water and tea.
Home:
Can't stop doing little projects around the house. Cleaning, cooking and re-organizing room by room. I am not sure about my husband but I am really looking forward to being able to work upstairs. The floor looks amazing and I can see the final product....So close but still lots to do.
With the change in season right upon us I have been obsessed with sweaters, scarves (nothing new), and anything else cozy and warm. Along with warm and comfy clothes there is a sense to make food that is filling, comforting and still healthy. So, I pulled out the crock pot and started to make some hearty soups and stews as well. The lentil soup I threw together the other night that was so tasty and can be easy for anyone to make.

Lentil Soup Recipe
1.5 cup dried lentils
1 cup diced carrots
1 cup diced onion
1 container of mushrooms diced
4 cloves garlic minced
4 roma tomatoes diced
1 red potato diced
4 cups vegetable broth (could use chicken)
1.5 cup water
2 tblsp Basil
2 Tblsp Oregano
1/2 tsp Thyme
14 ounces of crushed tomatoes
Salt and Pepper to Taste
1/2 Tblsp Apple Cider Vinegar (optional)
Mix all ingredients together in large crock pot. Cook for 4-5 hours on HIGH or 8-10 hours on Low. Enjoy topped with fresh herbs and with some fresh Italian bread.
If you wanted to add more or less veggies (celery, zucchini, kale, spinach) that would be yummy as well.
It is great to be home in the comforting walls of Ethel. I look forward to the upcoming days when Andy and I get to go to the pumpkin patch and pick out some fall things for home. Mostly I am looking forward to the rest of the little projects that we are going to continue working on around the house....First there must be a visit to St. Louis...
